If you haven't eaten any, you don't know what you are missing.  They are not as gamey as deer, and makes some of the best gravey you ever tasted. Elk is pretty close, if you get one out of the rut, but moose that we have taken, even in the rut, are deliciouso..

I had moose once at lunch in elementary school, someone donated a moose to the school or something, and as far as I remember they made it into salisbury steak like patties and doused them in gravy. I think it tasted like salisbury steak also, so that probably doesn't really count.
I've had farm raised elk and caribou many times though. |

Actually Rob, Moose if handled correctly, from the time you drop one, taste very much like beef. It is very lean though, and needs to be cooked carefully to not dry it out. I often will put a piece of beef fat on the top of the roasts. The tougher cuts are good done pot roast style, with veggies, and a bit of water. I make gravy out of the remainig juices, that is to die for. The better steaks, like t-bone, and sirloins, are great BBQ'ed. I marinate them in Italian salad dressing beforehand. The real tough meat is usually turned into burger, which is great for speghetti sauces, or meatloaf. I often get pepperoni, and fresh dinner sausage made as well. Lots of meat on a moose! Dressed out a good size bull will get you 400+ lbs of meat back from the butcher. 
The thick hide they have, needs to come off as soon as you can get it back to camp, to allow the meat to cool. I try to cut out any bloodshot meat as well asap. Even in sub zero temps, a moose shot in the afternoon, skinned, quartered and hung, will still be warm in the thicker part of the quarters, the next day. |

I've never hunted for moose, or bear, or really anything other than fowl, deer and varmints. We definitely have moose & bear here in Minnesota, but from what I hear it's a runaround to get licenses to hunt them.
Maybe i'll give it a shot one of these years. I bet they make good jerky, mmmm I love jerky.
I'm actually more interested in trying bear than moose, I hear it's much different than beef because bear aren't strict herbivores. |

Rob,
If you try Bear...Pay close attention to the color of the fat in one. If it is grayish in color I wouldn't eat it. That bear has been eating trash and has kind of a foul taste. The ones you would want to eat is a bear with really good white fat. Stay away from the trash dump bears even though they are easier to harvest unless you are only after the skin and head mount.
